2011 Bakery Fair: Can't Afford Zagu, Mr. Softy or Scramble King? Make Your Own & Start Selling. No Franchise Fee Needed.

If you are like most would-be entrepreneurs with very limited budget to start a business or do not have the means to purchase a franchise package from Zagu (P320,000), Mr Softy (P200,000+) or Scramble King (P75,000 to more than P100,000), maybe it might be better to start your Own Brand.

One of the supposed advantages of the Franchise system is that they will teach you the technology.  During the 2011 Bakery Fair, there were several food ingredient suppliers who are willing to teach you how to make them yourselves without the need to spend hundreds of thousands of pesos.


Ferna, one of the major Food Ingredient Companies in the country, had a booth displaying Premixes for Scramble, Soft Ice Cream and Pearl Shakes:

I understand the Scramble powder is about P130/kg or less and you can make 60 6oz cups already or a powder cost of P2.16/cup.  Selling price is P7.00.  (You still have to add ice, meralco, labor and rent but you should still have a health margin of profit?.

2011 Bakery Fair: Why Not Setup a Home-based Bakery Selling High-Margin Healthy Specialty Breads??

  During the 2011 Bakery Fair at the World Trade Center, I was talking to John Ryan Tan of Sinmag Bakery Machine Corp. (+632 5627299) and I told him that I do not know a thing about baking but I think there is a market for High-end high-margin Specialty breads like Real Rye Bread (more Rye, less ordinary flour) and Multi-Grain Breads among the Class A market.  If your near an upscale residential area like Makati, BF Paranaque, Acropolis or Greenhills, maybe you could offer home-delivery freshly-baked every morning!

I asked John if it is possible to setup a Home Bakery but without having to invest on a full-blown bakery setup and he said that their equipment can be setup on a smaller scale first and gradually build-up.

He then showed me Oven Model SM-801T which is good for 5 baking trays (of 5 loaves per tray) and each oven can be stacked one on top of the other.He claimed that though they are stacked, each oven can be individually controlled unlike other brands that have one one control for  all stacked ovens.

Capacity good for 5 trays


Their ovens are made in China (what isn't?) but it has a solid construction.  I noticed that even the oven door was thick and solid and John said this has the added benefit of preventing loss of heat thru thin doors of other brands. Price is P164,000 per layer (it was P143k during the Bakery Fair.  Maybe can still bargain,))

The other major equipment to consider is the Spiral Mixer Model SM-25 (P143k too during the Bakery Fair).  They also sell other lower capacity mixers (P48k to 76k) but John says the capacities are much smaller and the baker could outgrow its capacities in case sales really picks up.

If you browse the Bread shelves of a supermarket, you will notice that apart from the usual slice bread etc, there are now variants with Lower Glycemic Index (important for diabetics), whole wheat, multi-grains, Sugar-free and so on.  There seems to be a trend to offer Healthy breads but at a higher selling price.

2011 Bakery Fair: Gluta Ice Cream??? For Whitening??

Spotted at the 2011 Fil-Chinese Bakery Fair was a stand for the Gluta Ice Cream!!!

Seemed to be the oddest booth at the fair.  Maybe they know something I don't.
  I always thought Glutathione was always used for whitening skin??  Now, in Ice Cream form??

2011 Bakery Fair: Shorts, Slippers, Sando & Sandals Not Allowed!!!!

If you happened to visit the recent 2011 Fil-Chinese Bakery Fair at the World Trade Center, you would have notices a number of people milling around the Exhibit entrance-- some leaning on the wall, some just standing frantically talking to somebody on the cellphone or others still, just sitting on the sidewalk.

The Guards Are Serious!! NO ENTRY IF YOU LOOK LIKE ANY OF THE PHOTOS!!!
  They are there not because there is a celebrity amongst their midst but rather ---- they were refused entry to the Bakery Fair.  As stated on a signboard just beside the Exhibit entrance, sandals, slippers, sando and shorts and other inappropriate attire are not allowed inside the Exhibit Areas and the guards were serious about implementing it.

  I overheard a young lady talking loudly on her cellphone as apparently her companions were only inside unbeknown to them that she could not enter.  Hay disaster!!!!

A man, in exasperation and in shorts, said "Let's go to MOA na lang!"

So next time, check out the dress code before making the long trek to the World Trade Center.

2011 Bakery Fair: Lots of Ideas if You Cannot Afford Franchises

As with previous years, there are always new ideas for a small business, not just the big big bakeshops.

The title Bakery Fair is misleading as there was a cluster of booths selling Coffee shop equipment as well as coffee beans.  The salespersons were especially helpful as they not only provided how and cold coffee brews but also Costings to help you decide on the profitability of coffee shops.

I also noticed there are bake shop offerings for the homebased business owner who would like to try it at home and sell quantities to say her office workers before making any major investment.

In the succeeding posts, I will feature as many as I can about what might be of interest to the small business owner.
